Home made hash brown potatoes. Better than in the grocery freezer aisle or the burger joint drive thru. They are simply finely cut potatoes fried with a few spices. Good by themselves, or as a side dish. And potatoes will keep for a few weeks without a fridge, so good as boat or RV food.
Start by washing the potatoes. I like them with the peels on, but I cut out the eyes. I am going to use 2 medium potatoes, enough as a side dish for 2 people
Shred using the large holes of a kitchen grater. That is about a pound of shredded potato
They fry better if not too wet, so squeeze out as much of their moisture as you can with paper towels
Cut up some bacon. Everything is better with bacon.
Cut up some green onion for garnish
Start browning the bacon in the pan. Don't let it get completely crispy since it will cook another 4 or 5 minutes with the potato. If you are doing this without a fridge, use ready cooked bacon bits.
Add oil to the pan to fully cover it
Spread out the bacon evenly over the entire pan.
Spoon in the potatoes and spread out thinly
Fry on one side. Flip over. I cut it into quarters to make it easier. And fry on the other side
Check for doneness and set aside
I am going to add a couple of fried eggs to my breakfast, so we are no longer in a fridge less world
Add a bit of salt and pepper.
Put the potatoes back to warm them up
Server with ketchup
