Rosti actually, Rösti , is a Swiss version of hash browns. Shredded potatoes upgraded with fried bacon, With an egg on top. Actually, a sausage omelet.

It starts with potatoes. Cut out the eyes and shred with the large holes of a box grater. Fresh potatoes hold too much moisture to stick together. Wring out as much water as possible. We will fry cut up bacon, with enough oil to fully cover the pan and then spread to potatoes in a layer across the pan. Not too thick else they wont cook through.
Fry both sides.
Fry the onion lightly with a bit of oil, add the cut up breakfast
sausages and get the sausages well browned. Fry the egg, flip and add
the cheese.
Put the potato layer back on top to reheat, flip it over using a plate,
and serve
